A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Vibrant and expressive, the Pepperjack Central Otago Pinot Noir pours a brilliant scarlet with a subtle violet hue. Enticing aromas of juicy plum, dark cherry, and mocha are lifted by a hint of wild thyme, setting the stage for a richly layered palate. Bursting with dark cherry and luscious cassis, this Pinot is balanced by silky tannins and a supple mouthfeel. The wine displays bright purple hues with a core of garnet red. The lifted palate is smooth and silky with raspberry, violet flower and a hint of dried sage. This juicy red wine is perfect to accompany antipasto dishes, smoked meats and many Asian-inspired dishes with a bit of spice. Tannins are restrained, so this is also a lovely wine to enjoy as a pre-dinner option on its own and delicious when served slightly chilled.

Each vineyard contributes its own distinctive character, creating a rich and layered Shiraz bursting with vibrant plum, raspberry and dark cherry flavours, complemented by hints of mocha, spice and subtle oak. Silky tannins and a plush, full-bodied palate deliver a classic Barossa Shiraz with remarkable depth, balance and a long, satisfying finish.

The wine has a lifted bouquet of black cherry, violets, plum and all enhanced by hints of cedary oak. The concentrated palate exhibits boysenberry, red currant and fine grain textured tannins. Will age well with careful cellaring.

Exhibits aromas of blackberry, raspberry, spicy plum and toffee apple with hints of pomegranate and pepper. On the palate this rich intense wine displays spicy mulberry & ripe red cherry, Christmas pudding and chocolate notes, complemented by a seam of cranberry and star of anise.
