The palate shows good density which is balanced with coastal freshness and finishes with a core of powerful tannins. A rare dominance of Merlot over Cabernet Franc gives the wine good early accessibility but clearly a wine suited to ageing.

The Private Bin series has been inspired by the McGuigan family tradition to always share a special family wine with their guest. The soft and velvety Merlot combined with the more powerful Cabernet Sauvignon grapes produces a luscious red wine. First vintaged in 1964, Penfolds Bin 707 has become a benchmark for Australian Cabernet Sauvignon, embodying the Penfolds House Style through intensely flavoured fruit and maturation in new oak. The 2023 vintage opens with black olive, tobacco and dark cherry, layered with dusty chocolate, barrel-ferment praline, rhubarb and warm cinnamon. The palate follows with blackberry and mulberry alongside savoury pan juices, black olive and exotic spice, with dark chocolate and nutty praline adding richness. The Cabernet Sauvignon grape varietal is widely planted across South Australia's premium wine regions, particularly in the Limestone Coast where grapes with tremendous structure and beautiful aromatics are found. Well-regarded since its launch in 2002, the Koonunga Hill Cabernet Sauvignon showcases the merits of multi-regional blending to Penfolds 'House Style'. A bold, full bodied wine displaying lovely aromatics, excellent structure, and great length.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.
